Korean-Inspired Silken Tofu Pancakes with Soy-Lime Dipping Sauce
In the HeartSong kitchen today, another nourishing retreat recipe - inspired by Korean pajeon, the classic savoury green onion pancake loved for its crisp edges and soft bite. These Korean-style silken tofu pancakes use blended silken tofu and soy milk for extra natural protein and a soft texture. Ingredients (Serves 2–4)
For the pancakes:

2 cups silken tofu (~480–500 g)
-
1½ cups plain flour (~180–200 g)
-
Up to 1 cup water or unsweetened soy milk (add gradually)

1 large egg (optional — skip for vegan)
-
1½ teaspoons sea salt
-
1 bunch green onions or chives, cut into 5–6 cm pieces
-
Optional: ½–1 cup shredded carrot, courgette, cabbage, or sliced chili
-
Neutral oil for frying
For the dipping sauce:

¼ cup soy sauce
-
Juice of ½ fresh lime (or more to taste)

½ teaspoon sesame oil
-
1 teaspoon honey or pure maple syrup
-
Optional: pinch of Korean chili flakes (gochugaru) or fresh sliced chili
-
½ teaspoon toasted sesame seeds
Instructions

Make the batter:
Blend or whisk the silken tofu until smooth. Whisk in the egg if using. In a large bowl, combine flour and salt. Add the tofu mixture and stir gently. Gradually whisk in water or soy milk until you have a smooth batter - thick but pourable. -
Add vegetables:
Stir in green onions and any extra veggies you like. -
Cook crepe-style pancakes:
Heat a non-stick crepe pan over a medium heat with a little oil. Pour about ½ cup batter for each pancake. Swirl or spread to a thin, even round (about 20 cm wide). Cook for 2–3 minutes or until the bottom is set and golden, flip gently, and cook another 1–2 minutes until crispy and golden on both sides. Repeat with the rest of the batter. -
Roll & slice:
While warm, roll each pancake up and slice into bite-sized pieces. -
Dipping sauce:
Stir together soy sauce, lime juice, sesame oil, honey or maple syrup, chili (if using), and sesame seeds. -
Serve:
Arrange the sliced pancake rolls on a platter with the dipping sauce and extra lime wedges.
