HeartSong Retreat Recipes: Potato, Greens and Goat Cheese Pie
In the HeartSong kitchen this week, we’ve been baking this savoury summer pie: a delicious blend of cooked potatoes, sautéed leek, fresh greens, and crumbly goat cheese, all folded into a light batter of eggs, milk, flour, and olive oil.
This recipe is inspired by the traditional Greek Alevropita - a simple flour-based cheese pie, traditionally made with feta. Here, it’s flavoured with kalonji (onion) seeds, chilli flakes, and fresh chives for extra warmth and a subtle kick.
Perfect for a relaxed lunch or dinner, this pie is delicious served hot or cold, and easy to adapt with whatever vegetables or cheese you have on hand - a delicious recipe for summer gatherings or picnics, and one we like to serve at our group singing and meditation retreats.
Ingredients:

150g goat cheese or feta, crumbled

2 cups plain flour

2 tsp baking powder
-
4 eggs
-
2 cups milk
-
¼ cup olive oil (plus extra for drizzling)

2 cups cooked sliced potatoes

1 cup chopped greens (spinach, kale, chard or similar)

1 leek, chopped and sautéed until soft

1–2 tbsp chopped chives
-
Sprinkle of chilli flakes

Pinch of kalonji seeds (nigella/onion seeds)

Salt and freshly ground black pepper, to taste
Method:

Preheat the oven to 200°C (390°F). Lightly grease a medium-large baking tray or pan with olive oil.

In a pan over medium heat, sauté the chopped leek with a splash of olive oil and a pinch of salt for 5–7 minutes until soft and fragrant. Set aside.

In a large bowl, whisk together the flour, baking powder, salt, and pepper.

In a separate bowl, beat the eggs, milk, and olive oil until combined.

Gradually add the wet ingredients to the dry, stirring to form a smooth batter.

Fold in the cooked potatoes, sautéed leek, chopped greens, chives, crumbled goat cheese, and chilli flakes.

Pour the mixture evenly into the prepared tray. Drizzle a little olive oil over the top and sprinkle with kalonji seeds.

Bake for 45–50 minutes, or until the top is golden and a skewer inserted into the centre comes out clean.

Let it cool for 10 minutes before slicing. Serve warm or cold.
Serving Idea:
