date, coconut and sesame energy balls
A delicious, healthy, quick and easy to make recipe. Our HeartSong Normandie date, coconut and sesame energy balls are perfect for a pick me up snack during the day with a cuppa, or for when you are on the go. A new addition to our retreat kitchen menu, and a sweet treat for our singing and wellbeing workshop and retreat tea breaks too.
ingredients
250g pitted dates
1 cup desiccated coconut
2/3 cup peanuts/cashews
2 tbsp sesame seeds
1 tsp ground cinnamon
water
method
add 2/3 cup of the dessicated coconut and all the other ingredients to a food processor and blend until finely chopped and the mixture holds together well. Gradually add a little water if necessary to bring the mixture together.
roll into balls of about 1 tbsp size then roll into the remaining 1/3 cup of desiccated coconut.
store in an airtight container in the fridge until ready to eat. Bon appetit!
